Falafel (Middle Eastern Style)


Ingredients:⭕


1 cup dried chickpeas (don’t use canned)

½ large onion, roughly chopped (about 1 cup)

2 tablespoons finely chopped fresh parsley

2 tablespoons finely chopped fresh cilantro

1 teaspoon salt

½–1 teaspoon ground black pepper

4 cloves garlic

1 teaspoon cumin

1 teaspoon ground coriander

¼ teaspoon cayenne pepper (optional)

½ teaspoon baking soda

1 teaspoon baking powder

1–2 tablespoons all-purpose flour (as needed)

Vegetable oil, for frying


Instructions:✅


1️⃣. Soak Chickpeas:


Place dried chickpeas in a large bowl. Cover with cold water and soak overnight (12–24 hours). Drain completely before using.


2️⃣. Prepare Mixture:


In a food processor, combine soaked chickpeas, onion, garlic, herbs, and spices. Pulse until the mixture is coarse but holds together (like coarse sand, not a paste).


3️⃣. Add Binders:


Add baking soda, baking powder, and flour. Pulse again to combine. The mixture should hold together when squeezed.


4️⃣. Chill:


Cover and refrigerate for 1–2 hours (helps with shaping and frying).


5️⃣. Shape Falafel:


Using wet hands or a falafel scoop, shape into small balls or patties.


6️⃣. Fry:


Heat oil in a deep pan to 350°F (175°C). Fry falafel in batches for 3–4 minutes until golden brown and crispy. Don’t overcrowd the pan.


7️⃣. Drain:


Remove with slotted spoon and drain on paper towels.


Serving Ideas:


Serve in pita bread with tahini sauce, hummus, pickles, lettuce, tomato, and onion.
